Roasted Peaches With Raspberry Sauce

Roasted Peaches With Raspberry Sauce – Easy Desserts Recipe

Ingredients

  • 4 ripe peaches, halved and stoned
  • 25g (1oz) butter
  • 4 tbsp sugar
  • 2 tbsp clear honey
  • 25g (1oz) almonds, halved lengthways
  • For the sauce
  • 113g punnet raspberries
  • 25g (1oz) golden sugar
  • 4 tbsp orange juice

Directions

Step 1

To make the sauce, place the raspberries in a food processor with the sugar and orange juice and pulse to combine. Alternatively, crush the raspberries with a fork, add the sugar and orange juice and mix will. Pass the mixture through a sieve to remove any pips and set aside.

Step 2

Preheat the oven 200oC/400oF/Gas mark 6. Line an ovenproof dish with baking paper and place the peach halves on top. Dot with the butter, sprinkle with the sugar and drizzle over the honey. Cook for 10 minutes, remove from the oven, sprinkle over the almonds return to the oven and cook for 10 minutes or until the peaches are soft.

Step 3

To serve, place the peach halves on individual plates and serve with the raspberry sauce.
