RICH CHOCOLATE SOUFFLES – Desserts Recipes

- 1 tbsp melted butter
- 100g (31/2 oz) golden sugar, plus 1 tbsp, for sprinkling
- 100g pack green and black’s dark chocolate, broken into pieces
- 2 tbsp orange juice
- 2 medium eggs, separated
- 1/2 tsp finely grated orange rind Pinch of salt
- Cocoa powder, for dusting (optional)
Grease the sides of four individual 125ml (4floz) ramekin dishes, or ovenproof soufflé dishes. With the melted butter. Sprinkle the tablespoon of sugar equally between the dishes, dust the sides and shake out any excess. Preheat the oven to 190oC/375oF/ Gas mark 5 and place a baking sheet in the oven.
Heat the chocolate and orange juice in a bowl, over a pan of simmering water, until the chocolate has melted and the mixture is smooth. Remove from the heat and stir in the egg yolks with the orange rind and half the sugar.
Whisk the egg whites in a large bowl with a pinch of salt until they form stiff peaks, then slowly whisk in the remaining sugar. Fold a quarter of the egg whites into the chocolate, then fold in the remaining egg whites. Spoon the mixture into dishes and place in the oven on the hot baking sheet. Cook for 12-14 minutes, until well risen and just set. Dust with cocoa powder, if using , and serve.
