Peach and banana rice pudding – baby foods
Makes about 2-3 portions
25 (1oz) while fragrant rice
150ml (1/4 Pint) apple juice
1 peach, skinned, stoned and chopped
1/2 ripe banana, chopped
Peach and banana rice pudding
Place the rice in a medium saucepan with the apple juice. Bring to the boil, cover and simmer for 20minutes or until the rice is cooked. Allow to cool slightly.
Strain the rice, reserving the apple juice, and puree together with the peach and banana. Mix with a fork, to a suitable consistency using the apple juice. Cover and keep in the fridge and use as required. Not suitable for freezing.
