Oven – Baked Parmesan Chicken – Easy chicken recipes

25g(1oz) fresh breadcrumbs, made from 1 slice stonebaked white loaf, crusts removed
75g (3oz) Parmesan, finely grated
2 spring onions, finely chopped
Finely grated ring and juice of 1/2 lemon
50g (2oz) butter, melted
Sea salt and freshly ground black pepper
4 skinless chicken breast fillets
2tbsp chopped fresh parsley
Preheat the oven to 1900C/3750F/Gas Mark 5. Mix the breadcrumbs, Parmesan. spring onions, lemon rind, butter and seasoning together in a small bowl. Divide the mixture between the chicken breasts and using a fork, press the mixture down on top, to form an even coat.
Transfer the chicken breasts to a shallow roasting tin and bake for 20 minutes. Remove the chicken from the roasting tin and keep warm. Add the lemon juice and parsley to the buttery juices in the tin and mix well. Pour these juices over the chicken and serve straight away.
