MANGO OAT CRUNCH – Easy Desserts recipes

50g (2oz) butter
25g (1oz) golden sugar
125g (4oz) porridge oats
200g carton full fat soft cheese
200g carton crème fraiche
Juice of 1/2 Lemon
4 tbsp clear honey
To Prepare the mangoes, slice the two fatter ‘cheeks’ of the mangoes from either side of the stone. Cut a criss-cross Pattern across the flesh of each piece to divide into small cubes, then push the skin upwards from the centre and carefully slice of the cubes in to a bowl.
Melt the butter and sugar in a saucepan and add the porridge oats. Cook over a medium heat for 2-5 minutes, stirring all the time, until the oats are just golden and toasted. Leave to cool slightly.
Mix together the soft cheese and crème fraiche in a bowl, add the lemon juice and 2 tablespoons of the honey and combine well. Spoon the oats into individual glasses or serving bowls. Add a layer of the cream mixture, top with the mango, then drizzle over the remaining honey and serve straight away. Alternatively, fold the mango and oats into the cream and serve all combined in glasses or bowls.
