Chicken Kebabs With Couscous – Easy Chicken Recipes

4 chicken breast fillets, skin Removed and cut into 24 pieces
1 yellow and 1 red pepper deseeded and cut into 8 pieces
Juice of 1 lemon
2 garlic cloves, crushed
2 tbsp extra virgin olive oil
1 tbsp chopped fresh coriander
For the sauce :
150ml (1/4 pint) natural yogurt
1 tbsp lemon juice
Finely grated rind of ½ lemon
Sea salt and freshly ground black pepper
For the couscous:
250g (9oz) couscous
25g (1oz) butter
4 spring onions, finely chopped
3 tbsp chopped fresh coriander
Place the chicken and peppers in a non-metallic bowl, add the lemon juice, garlic, olive oil and coriander and mix. Cover and leave to marinate for at least 1 hour. Meanwhile, combine all the ingredients for the sauce. Season and leave to chill. Soak four large wooden skewers in water for about 10minutes.
Preheat the grill to high. Thread the chicken and peppers onto the skewers and grill for 10-12 minutes, turning occasionally, until the chicken is slightly charred and cooked through and tender. Keep warm.
Meanwhile prepare the couscous according to packet instructions, then fluff up with a fork. Melt the butter in a small saucepan and fry the spring onions for about 2minutes. Add the spring onions with 3 tablespoons of chopped coriander and plenty of seasoning to the couscous and mix well. Server the couscous on plates, with the kebabs on top, then drizzle with the yogurt sauce.
